Bentosh was originally recipes I adapted or created for bowls, which I love to eat out of. The word Bentosh is a mash-up of bento, because I love the orderliness of Bento boxes and Japanese food. But I also like a nosh, which is loosely interpreted sometimes as snacking or eating enthusiastically— a big sloppy pastrami sandwich. The yin and yang of Bentosh— orderly like a bento and kind of crazy like noshing—is an aesthetic I aspire to.
